Grilled Skillet Chicken with Vegetables
Tender chicken thighs, aromatic paprika, and bright summer veggies all seared together in a hot grill pan. The flavors are straightforward yet vibrant, brimming with Mediterranean charm, and the dish ends with a dollop of tangy feta and crisp basil.
Instructions
Marinate the chicken for 30-40 minutes to build flavor.
Trim the chicken thighs as needed. In a bowl, combine the chicken with salt, pepper, smoked paprika, sliced sweet onion, and avocado oil. Mix well, ensuring the chicken is evenly coated.
Wash and prepare the vegetables
Slice the bell pepper and zucchini, rinse the cherry tomatoes, and trim and cut the asparagus.
Grill the chicken for about 5 minutes per side, until golden and well-seared.
Heat a grill skillet over medium-high heat. Add the marinated chicken thighs along with the crushed garlic and a sprig of fresh rosemary.
Add the vegetables and cook for another 5 minutes
Add the bell pepper and zucchini to the pan, allowing them to soften slightly while picking up the smoky flavors.
Finish with tomatoes
Add the cherry tomatoes, gently shake the pan, and cook for 1 more minute—just until they begin to blister.Plate the chicken and vegetables, then finish with cubes of feta cheese and fresh basil leaves.
Tips
To achieve a rich sear and preserve the chicken’s moisture, let the pan reach a true heat before introducing the meat. If the pan appears too full, prepare the chicken in smaller groups; otherwise, the pieces will steam rather than brown. Also, be sure to add the minced garlic and chopped rosemary to the pan—they infuse the oil and gently enhance the flavor without dominating the meal.
